Egg Sauce Toast Recipe

Name: Egg Sauce Toast

Origin: Nigeria

Ingredients:

  • 4 slices of soft white bread
  • 2 large fresh eggs
  • 1/2 small red onion (extremely finely diced)
  • 1 small firm tomato (seeded and finely diced)
  • 1 fresh scotch bonnet pepper (seeded and minced)
  • 1 tablespoon unsalted butter or margarine
  • 1 pinch of salt
  • 1/2 teaspoon seasoning powder
  • 1 tablespoon canned sardines or cooked minced meat (optional)

Steps:

  1. In a small bowl, crack the two eggs
  2. Add the finely diced onions, tomatoes, scotch bonnet pepper, salt, and seasoning powder
  3. If using sardines, flake them in at this stage
  4. Whisk vigorously until the egg is completely uniform and slightly frothy
  5. Plug in your double-triangle electric sandwich maker and allow it to preheat fully until the ready light turns on
  6. Generously brush the top and bottom non-stick plates with melted butter or margarine to ensure a rich, golden-brown crust
  7. Carefully place two slices of bread side-by-side on the bottom plate
  8. Press gently down in the center of each slice with the back of a spoon to create a small indentation
  9. Slowly pour the raw egg and vegetable mixture evenly into the center well of each bread slice, ensuring it does not spill over the edges
  10. Place the top two slices of bread directly over the filling
  11. Lower the lid of the sandwich maker and firmly clamp the latch shut to compress and seal the edges of the bread
  12. Allow it to toast uninterrupted for 4 to 6 minutes until the egg cooks through and the exterior turns golden brown
  13. Open the press, remove carefully with a spatula, slice along the diagonal seal, and serve hot
