Nkate Nkwan Recipe

Name: Nkate Nkwan

Origin: Ghana

Ingredients:

  • Groundnuts (peanuts)
  • Chicken
  • beef
  • goat
  • or fish (protein of choice)
  • Tomatoes
  • Onions
  • Garlic
  • Ginger
  • Red bell peppers
  • Scotch bonnet peppers (optional for spice)
  • Palm oil or vegetable oil
  • Salt
  • Seasoning cubes (optional)
  • Water or stock
  • Vegetables (like garden eggs or spinach
  • optional)
  • Lemon or lime juice (optional for taste)

Steps:

  1. Prepare the groundnuts: Roast or boil the peanuts until cooked, then grind them into a smooth paste or powder
  2. Prepare the base: Blend tomatoes, onions, garlic, ginger, red bell peppers, and scotch bonnet peppers into a smooth mixture
  3. Cook the protein: In a large pot, heat palm oil or vegetable oil
  4. Add your choice of meat, chicken, goat, or fish, and sauté until lightly browned
  5. Add the blended mixture: Pour the blended tomato-pepper-onion mixture into the pot with the protein
  6. Fry for about 5–10 minutes until it reduces slightly
  7. Add water or stock: Pour in enough water or stock to achieve your desired soup consistency
  8. Bring to a boil
  9. Incorporate groundnut paste: Gradually stir in the groundnut paste, making sure there are no lumps
  10. Simmer on low heat for 20–30 minutes, stirring occasionally
  11. Season the soup: Add salt, seasoning cubes (if using), and any optional vegetables like garden eggs or spinach
  12. Simmer for another 5–10 minutes
  13. Finish and serve: Adjust seasoning to taste
  14. Optionally, add a squeeze of lemon or lime juice for extra flavor
