Ingredients:

  • Long grain parboiled rice
  • Fresh tomatoes
  • Red bell peppers
  • Scotch bonnet pepper
  • Onions
  • Tomato paste
  • Vegetable oil
  • Chicken or beef stock
  • Bay leaf
  • Thyme
  • Curry powder
  • White pepper
  • Seasoning cubes
  • Salt

Steps:

  1. Blend tomatoes red bell peppers scotch bonnet and one onion until smooth
  2. Heat vegetable oil in a pot and sauté sliced onions until fragrant
  3. Add tomato paste and fry for several minutes to reduce acidity and deepen the flavour
  4. Pour in the blended pepper mixture and cook until the sauce thickens and oil begins to rise to the surface
  5. Add thyme curry powder bay leaf white pepper seasoning cubes and salt and stir well
  6. Pour in the stock and bring the sauce to a gentle boil
  7. Add washed parboiled rice and stir to coat evenly in the sauce
  8. Cover the pot and cook on low heat until the rice absorbs the liquid and becomes tender
  9. Allow the rice to lightly toast at the bottom of the pot to develop the signature party flavor
  10. Turn off the heat allow it to rest briefly then fluff gently and serve hot

Steps:
