Light Soup (Nkrakra) Recipe

Name: Light Soup (Nkrakra)

Origin: Ghana

Ingredients:

  • Meat or fish of choice (chicken
  • goat
  • mutton
  • beef
  • tilapia
  • or catfish)
  • fresh tomatoes
  • Scotch bonnet peppers
  • onion
  • garden eggs (African eggplant)
  • prekese (Tetrapleura tetraptera)
  • grains of selim (hwentia)
  • calabash nutmeg (ehuru)
  • fresh ginger
  • garlic
  • salt
  • seasoning cubes
  • water

Steps:

  1. Season your choice of meat or fish with salt, seasoning cubes, ginger, garlic, and onion, then allow it to marinate for at least 15 minutes
  2. Blend fresh tomatoes, Scotch bonnet peppers, and onion into a smooth purée
  3. Place the seasoned protein into a pot with a little water and cook on medium heat until it begins to release its natural juices
  4. Add the blended tomato and pepper purée into the pot and stir to combine
  5. Add garden eggs, prekese, grains of selim, and calabash nutmeg for traditional depth and aroma
  6. Pour in enough water to achieve a light, clear broth consistency and bring to a boil
  7. Reduce the heat and allow the soup to simmer gently for 30 to 60 minutes depending on the protein used, until fully cooked and the broth is rich and aromatic
  8. Taste and adjust seasoning with salt and seasoning cubes as needed
  9. Serve hot with fufu, banku, or boiled yam
