Coconut Rice Recipe

Name: Coconut Rice

Origin: Southern Nigeria

Ingredients:

  • Rice
  • coconut milk
  • onions
  • tomatoes (optional)
  • red bell peppers (optional)
  • vegetable oil
  • seasoning cubes
  • salt
  • thyme
  • curry powder
  • stock or water

Steps:

  1. Wash the rice thoroughly and set aside
  2. Extract fresh coconut milk from grated coconut or use canned coconut milk
  3. Heat oil in a pot and sauté chopped onions until fragrant
  4. Add blended or chopped tomatoes and peppers if making a savoury version and cook until reduced
  5. Pour in the coconut milk and a little water or stock and bring to a boil
  6. Add seasoning, salt, and spices
  7. Add the washed rice and stir gently
  8. Cover and cook on low heat until the rice absorbs the liquid and becomes tender
