Ingredients It Favours:

  • Vegetable oil
  • Oxtail or any beef
  • Paprika
  • Baking powder
  • Pepper
  • Tomato paste
  • Soy sauce
  • Rosemary
  • Chili
  • Water
  • Sweet corn
  • Irish potatoes
  • Carrots
  • Potatoes

Steps:

  1. Start your fire and add some oil inside of your pot, I'll be using some oxtail, but you're more than welcome to use some beef if you'd like
  2. I seasoned my oxtail before browning it with some paprika, some bit of pepper, some parsley, some six gun and as well as some baking powder
  3. I then proceeded to add some tomato paste, some soy sauce and then added some rosemary, onion, red pepper, green pepper and also some chili
  4. And then I mixed my parts until everything was well combined before adding some water
  5. I made sure that all my pieces were fully submerged into the water before closing the pot and letting it cook until all my pieces were tender
  6. , I then added my baby potatoes which I cut in half and then proceeded to add my sweet corn, my baby marrons and some carrots
  7. I gave that a good mix and also added a bit of water so that the vegetables can steam a little better before I close that up
  8. When all your vegetables are fully cooked and your oxtail is literally falling off the bone, then you know that your boiki is ready to serve
  9. I garnished it with some rosemary and then I had it with some dumpling and it is absolutely delicious
