Wash the rice thoroughly and soak it in clean water for approximately 6 hours
Drain the soaked rice properly, then blend it with coconut milk and a little vegetable oil until the mixture becomes completely smooth
Transfer the blended rice mixture into a bowl, crack in the egg, add seasoning and salt, then whisk thoroughly until everything is well combined
Clean and prepare the moi moi leaves, then carefully pour the coconut rice batter into the leaves and wrap each portion securely
Arrange the wrapped batter in a steaming pot and cook until the coconut rice moi moi is completely set and cooked through
While the moi moi is steaming, roughly blend the tatashe, rodo, onions and garlic
Heat palm oil in a pan, season the fish and fry until crispy and well cooked, then remove the fish and set it aside
Add the blended pepper mixture to the same palm oil and fry on low heat, then add seasoning and allow it to cook slowly until the pepper develops a rich ata dindin flavour and the oil begins to separate
Return the fried fish to the pepper sauce and gently stir so that the fish becomes coated with the sauce
Slice the ripe plantain and fry until golden brown on both sides, then remove and drain the excess oil
Carefully unwrap the cooked coconut rice moi moi and arrange it on a serving plate with the pepper sauce and fried fish
Add the fried plantain alongside the coconut rice moi moi and serve hot
