  • ginger

  • black pepper) Flour mixture (to thicken) Salt Olive oil Water or broth Vermicelli pasta (optional) Lemon wedges (for serving)

Steps:

  1. Sauté the Base: Heat olive oil and fry onions, celery, coriander, and parsley until fragrant
  2. Add Meat & Spices: Add lamb pieces (if using) with turmeric, ginger, pepper, and cinnamon
  3. Add Tomatoes: Pour blended tomatoes and tomato paste; cook for a few minutes
  4. Add Beans: Add chickpeas and lentils, then cover with water or broth
  5. Simmer: Cook for 45–60 minutes until everything softens
  6. Add Vermicelli: Add pasta during the last 10 minutes
  7. Thicken the Soup: Mix flour with water to form a slurry and slowly stir it in to achieve a silky texture
  8. Adjust Seasoning: Add salt, taste, and adjust spices
  9. Serve: Garnish with lemon wedges and fresh herbs
