Ingredients It Favours:

  • Fresh fish (croaker
  • catfish
  • snapper)
  • prawns/shrimp
  • periwinkle (optional)
  • crabs (optional)
  • fresh pepper (scotch bonnet)
  • onions
  • garlic
  • ginger
  • scent leaves or uziza leaves
  • crayfish
  • pepper soup spice
  • seasoning cubes
  • salt
  • water

Steps:

  1. Clean and cut the fish into medium pieces
  2. Wash prawns, periwinkle, and other seafood thoroughly
  3. In a pot, add water/stock, onions, blended pepper, crayfish, seasoning cubes, and pepper soup spice
  4. Bring to a boil for 5–7 minutes
  5. Add fish and tougher seafood (crabs, snails first if used)
  6. Cook gently for 8–10 minutes without stirring too much
  7. Add prawns and periwinkle, then salt to taste
  8. Add scent leaves or uziza leaves and simmer for 2–3 minutes
  9. Turn off heat and allow flavors to settle
