  1. Soak black-eyed peas (beans) in water and peel off the skins
  2. drain and blend with onions, bell pepper, scotch bonnet or chilli pepper, and a little water until smooth
  3. pour the batter into a bowl and add salt and seasoning cubes
  4. whisk the batter to incorporate air for fluffiness
  5. heat a generous amount of vegetable oil in a deep pan until hot
  6. scoop the batter with a spoon and carefully drop into the hot oil at medium or low heat
  7. fry until golden brown on all sides
  8. remove and drain on paper towels or sieves
  9. serve hot and enjoy
